Fall is in full swing here in Colorado. The drop in temperature has many people heading to their favorite coffee shops to warm up. We all know about the Pumpkin Spice Latte that debuted by Starbucks in 2003. Containing spices like cinnamon, nutmeg, and clove, the PSL evokes feelings of nostalgia, the holidays, and a sense of coziness.
Some local Colorado Springs establishments have gotten creative with the seasonal drinks they offer, and you can now find these fall flavors featured in some fun and innovative concoctions. From lemonades and cider to beer and cocktails, there’s a fall drink for everyone.
So, move over PSL! Here’s a list of some unique seasonal drinks you can try in Colorado Springs, in no particular order:
First up, we’ve got a Pumpkin Milkshake IPA from Local Relic. Local Relic specializes in creative and unique artisan ales, and their beers often feature unusual ingredients. Their Pumpkin Milkshake IPA is brewed with lactose and pumpkin pie spice to make a creamy and dreamy beer. Local Relic also has a second fall-inspired beverage on the menu, a BBA Honey Cinnamon Belgian. This Belgian style abbey ale is brewed with cinnamon and fermented with locally sourced honey from Lockhart Farms. Check this beer out soon, because once it’s gone, it’s gone forever! Visit Local Relic on The Spring Craft Brewery Tour.
Pikes Peak Lemonade Co. is well-known in Colorado Springs for their delicious and innovative lemonades. They were the first lemonade taproom in the nation and use only the highest-quality ingredients in their drinks. Their Fall Sampler Collection includes six fall-inspired concentrates including pumpkin spice, cranberry, candied apple, spiced chai, spiced plum, and maple nut. These concentrates can be made into lemonades or cocktails! For lemonade, simply mix the concentrate with 48 ounces of water. To make a cocktail, mix one ounce concentrate with one ounce of alcohol and one ounce of sparkling water, and voila, you’ve got a unique and delicious fall cocktail! Pikes Peak Lemonade Co. is a frequent stop on The Original Colorado Springs Food Tour.
This inventive cocktail is offered at Four by Brother Luck and is composed with mezcal, tequila, Chartreuse, lemon juice, sage, and of course a Granny Smith apple garnish. You can order “The Granny” to pair with your four-course dinner, which is also fall-inspired and features fresh local ingredients. Chef Luck has appeared on numerous cooking shows including Food Network’s Chopped and Bravo’s Top Chef. Check out Four by Brother Luck and its sister restaurant, Lucky Dumpling, on The Original Colorado Springs Food Tour.
At the Lager House, you can enjoy your favorite pumpkin spice latte flavor in beer form! The Pumpkin Spice Latte Beer from Pikes Peak Brewing Co. Lager House was an instant crowd pleaser. Enjoy sipping your seasonal beer on the rooftop patio while you take in the stunning views of Pikes Peak. And don’t let the cool weather stop you since their outdoor heaters will keep you toasty warm all throughout the fall and winter. This brewery makes a regular appearance on The Spring Craft Brewery Tour.
Dynamo Coffee Roasting Co. is on the northeast end of Colorado Springs and was started by high school sweethearts, Will and Leah. They’re celebrating the season with a delicious Apple Crisp Latte that is best coupled with their apple crisp scones. And if you want even more apple options, they also serve Spiced Caramel Apple Cider!
“The Boxe Francaise” means French boxing, which tells you up front that this cocktail packs a punch. This rich and powerful cocktail can be found at Brooklyn’s on Boulder. Their speakeasy tasting room features pre-prohibition cocktails as well as more modern creations. The Boxe Francaise cocktail is a new addition to their fall menu. It’s spirit-forward and made with absinthe, dry gin, Anisette, Benedictine, Lillet, and Angostura bitters. Experience this hidden locale while they’re closed to the public on The Springs Signature Cocktail Tour.
Boxing Brothers recently won Gold in the Cider House Category of the 2021 Colorado Springs Indy Best Of Awards! They make their high-quality ciders the old fashioned way in small, slow batches. All of their cider is gluten free, features at least six different apple varieties, and ages for about eight months. Their available flavors change regularly, but right now for fall they are offering a delicious caramel chai hard cider as well as their popular spiced pumpkin hard cider.
Fall is truly an amazing time for craft beer! Mash Mechanix Brewing Co. just released their new Pueblo Green Chile Ale. Did you know that Colorado has nine famous foods? Well, this beer features one of them, the Pueblo Green Chile! Fall is harvest season for these delicious and smoky peppers, which means it’s the perfect unique ingredient for a fall beer. You can enjoy your beer while listening to live music or feasting on a Rocky Mountain Pizza.
Battle Mountain Brewery Company is currently offering a delicious seasonal Chai Tea Blonde Ale. This heavily spiced blonde ale is a customer favorite and returned this fall by popular demand. If you prefer a little spice in your life, another new beer to note is their Green Chili Cream Ale. Enjoy either of these ales in their mining-themed taproom!
