Food trucks may seem like a recent addition to the American food scene, however, they actually hold a deep seated place in the world of food — dating all the way back to 1691, believe it or not.
Starting with big city vendors selling cheap food from carts to make a wage, these soon became horse-drawn wagons feeding the military, frontiersmen, and university students. Enter the first hot dog cart (think Oscar Meyer Weiner) and the first ice cream truck in the early 1900s and finally, the first taco truck in Los Angeles in 1974. In the early 2000s, the restaurant industry started recognizing and even rating food trucks around the country. From massive food truck meetups to the movie “Chef,” this phenomena has become an accepted and valued part of our restaurant and hospitality industry.
In recent years, Colorado Springs has become a center for unique and thriving food trucks, offering tasty options from around the world.
Here are five food trucks you need to try this summer:
Since opening in 2013 on Boulder Street, Piglatin has become a local fan favorite in the Colorado Springs food truck scene and even gained national attention when it was featured on Guy Fieri “Diners, Drive-Ins and Dives” Food Network show in 2015. The truck takes a unique spin on traditional Latin cuisine — serving up the juiciest marinated pork you’ve ever tasted, platano maduros, cheesy rice balls, stacked arepas, and so much more. While they started on wheels, Piglatin has since expanded to a brick and mortar “cocina” on Dublin and Academy Blvd. They serve up their classics alongside a whole menu of fun new dishes and one of the tastiest spicy margaritas in town.

Did you ever think you’d find a wood-fired oven in a food truck? Neither did we but we’re sure glad we did! This one-of-a-kind food truck started in 2016 by the Cunningham family and has been serving up delicious wood-fired pizzas, calzones and strombolis throughout Southern Colorado ever since. Their Southwestern pizza is a fan favorite—made using their homemade pork green chili, shredded cheddar and jack cheeses, slow roasted pulled pork, sliced jalapeños and topped with their signature chipotle cream sauce. Yes please!
The Cunningham’s aren’t just passionate about their pizza; they feel pretty strongly about supporting local businesses as well. Many of their ingredients are locally sourced and they make sure to set up shop at various local breweries all of which help to boost our local economy and the booming food truck scene here in Colorado Springs.

If you can’t guess, Lucy, I’m Home is an homage to the television classic, I love Lucy and is bringing authentic Cuban food to the Colorado Springs area. The truck is family-operated, and their menu is full of food straight from the heart — a cubano served on their signature bread, a havana slider drizzled with their garlic aioli, and more, all served with plantain chips and their mojo sauce. Colorado Springs definitely isn’t known for its Lobster rolls, but Chef Bob’s Lobstah Trap sure is! The real pearl of the Lobster Trap is Chef Bob himself — he was raised in Watertown, MA, speaks with a true Bostonian accent, and has a long list of culinary accolades to follow his name. Named “Maitre du Gout” (Master of Taste) in 2007 by the National Chefs in America Awards Foundation, Chef Bob is bringing world-class, authentic New England cuisine to the Wild West. His recipes are completely homemade and handmade, using the freshest ingredients to ensure the highest quality. No need to leave Colorado Springs to experience some of the best cuisine Jamaica has to offer. Jamaican native Everton Cameron, High Grade’s owner, has 20 years under his belt as a professional chef and it shows! He’s serving up authentic Jamaican dishes you won’t want to miss (and some American favorites too)! Their specialties include Jamaican Beef Patties, Jerk Chicken Pork Eggrolls and Jamaica’s National Dish—Ackee and Salted Cod.
