What started as a single location restaurant in Boulder, Colorado has grown to become a well-known, farm-to-table chain located in cities across the nation. Not only are they providing healthy and sustainable food, but they are also passionate about offering the Colorado Springs’ community solutions regarding the exploitation of labor in retail settings. Nourish Juice is located conveniently in Downtown Colorado Springs and is passionate about educating the community on healthy food options and providing nutrient rich foods and drinks, all made from fresh, natural ingredients. Next time you’re in the downtown area, be sure to grab a fresh smoothie or juice and one of their delicious, filling salads or noodle bowls. The Burrowing Owl is serving up vegan food and drinks that even meat eaters will love. They describe themselves as a “local neighborhood community meeting spot where people and dialogue meet in concord” — hoping to be a spot where friends, family, and strangers can gather and discuss the topics that matter the most. They value being social, sustainable, and rooted in community and are accomplishing this through making great food for all to enjoy. Their menu is totally vegan and features fun concoctions like cashew queso, vinegar cocktails, and Sloppy Joes.
Adam’s Mountain Cafe is a local favorite — filled with antique tables and chairs, artwork by a local, and some of the best food you’ll find in Colorado Springs. The cafe caters towards vegetarians, however, meat eaters will be sure to find something delicious to eat! If you’re in for breakfast, be sure to try their homemade Chai tea and the Huevos Rancheros, which have been voted “Best In the Springs” seven years in a row. For dinner, you’ll find seasonal and globally inspired dishes, alongside some good old comfort food, like mac and cheese.
At TILL, you’ll find the best of comfort and health food, all in one. Their carefully-crafted menu features artisan baked breads and pizzas, an extensive wine selection, and unique entrees like their Oak Roasted Game Hen, Cast Iron Meatloaf, and Vegan Mushroom Risotto, just to name a few. To the side of the restaurant, you’ll find The Roost, TILL’s attached casual cafe and market. Grab some local coffee and freshly baked breads and treats and browse the small market filled with healthy goodies for you to take home to the family.
While TILL is currently located on Powers Boulevard on the North end of town, the restaurant will be relocating to a new (TBD) location in the Broadmoor area and will be replaced with an open-air entertainment and dining operation (which will still include The Roost), fit with pickleball courts, shuffleboard, and other fun activities. For all you gluten-free, dairy-free, nut-free sweet loving friends out there — Sweet Elizabeth’s Organic Bakery had you in mind. This little family run bakery is plant-based, allergy-safe, and gluten-free and was started as a quest to provide a safe place for those living with allergies and restrictions to indulge in great food. Their menu includes breakfast and lunch as well as delicious baked goods and breads. They also sell allergy-safe baking mixes made with real, organic ingredients, so you can make yummy goodies at home!
If you’re vegan, this one’s for you! Santana’s Vegan Grill is Colorado Springs’ and only vegan drive-thru and local vegans are literally eating it up. They’re open from 7:00 AM – 8:00 PM and are serving up breakfast, lunch, and dinner! Their menu is quite simple — think In-and-Out or Chick-fil-A, but no meat (duh!) — with classic offerings like burgers, chicken sandwiches, mozzarella sticks, french fries, and breakfast sandwiches, and burritos.
